This project promotes acorn consumption by identifying beneficial genotypes and developing healthy food products. It aims to enhance dietary options using nutritious acorns, leveraging research in fruit postharvest and biomedicine.
The objective of ACOFOOD is to promote the consumption of acorn by human beings as it is a nutritious fruit with high production in the Mediterranean region, selecting the genotypes with the best functional characteristics for the consumer, identifying markers related to healthy phenolic compounds and , the absence of astringency and cytotoxicity, and developing a healthy acorn-based food.
