The BIOIMPROVE project aims to create a portable biosensing device for detecting histamine in food products. This device will enhance food safety by enabling early detection of histamine levels, preventing potential food poisoning.
Determination of the histamine content is of paramount importance for the food industry as a parameter of the hygienic quality and freshness of food, as well as to prevent scombroid fish poisoning, an allergy-like food poisoning.
