This project aims to recycle brewer's spent grain by extracting bioactive compounds to enhance the shelf life of meat products. Using environmentally friendly methods, the study focuses on optimizing extraction techniques to improve the quality and safety of these compounds for food applications.
Brewer's spent grain (BSG) is a significant by-product of beer brewing, accounting for 85% of the waste produced and 31% of the original malt weight.
Therefore, there is a need to explore various recycling methods for this residue and transform it into value-added products.
The objectives of this proposal align with several UN Sustainable Development Goals as they address sustainable food production, and sustainable consumption, focusing on health and well-being.
