This project aims to utilize apple pomace to extract beneficial compounds that may help combat obesity-related health issues. It explores the antioxidant and anti-inflammatory properties of these compounds using advanced human cell models to simulate intestinal absorption.
Overweight and obesity are risk factors for cardiometabolic diseases that can be partially prevented by adopting healthier lifestyles and eating habits, such as increased fibre intake and other bioactive compounds, such as phenolics.
