This project focuses on utilizing onion waste to create a dietary fiber product, FIBRACEP, which reduces cholesterol absorption and increases good cholesterol levels. The initiative aims to address both environmental waste and health issues related to high cholesterol through innovative food applications.
Being onions the second most important horticultural crop in the world (86 million tonnes, FAO 2014), production of onion waste has risen over recent years in Europe.
Well over 500,000 tonnes of onion waste are generated in the European Union each year, mainly in Spain, The Netherlands, and the United Kingdom, becoming an economic (as high as €40/ton just considering disposal costs) and environmental problem (rapid growth of phytopathogens e.g.
