The project seeks to minimize waste in the dough sheeting process within the baking industry by developing a new roller-cutter technology. This innovation aims to reshape dough efficiently, reducing waste from 30% to less than 5%.
Current dough-sheeting process produces up to 30% of waste (The mass of waste is of 20% order of the end-product produced).
The average cost of waste is €100/tonne (including landfill or incineration tax, administration, transport and raw material cost).
Such high cost has burdened the industry greatly, and SMEs are particularly vulnerable to further increase of landfill tax.
