SMART PROTEIN aims to develop sustainable protein sources from plants and fungi by upcycling food industry by-products. The project focuses on creating a resilient protein supply chain that enhances nutrition and supports the bio-economy.
It is undeniable that protein is an indispensable part of the human diet, but the way we produce and consume it today presents many challenges, in terms of both global consumption patterns and their social, environmental and economic impacts.
