The UltraTender project seeks to optimize beef tenderization using High Power Ultrasound technology. This innovative approach aims to significantly reduce the aging period of meat while maintaining quality, ultimately lowering production costs for processors.
Meat tenderness has long being recognized as the most important attribute of meat, greatly influencing consumer acceptability.
After meat slaughtering, shortening of the muscle protein fibers causes the meat to become tough (“rigor mortis”).
