VeggiEAT aims to improve vegetable consumption in Europe by creating a predictive model that considers individual preferences and environmental factors. The project will develop consumer-oriented products and strategies to encourage healthier eating habits.
Adequate vegetable consumption is fundamental to a healthy balanced diet, however, EU compliance with dietary guidelines is poor and further research is required to overcome consumption barriers.
The aim of VeggiEAT is to develop an EU platform for predictive modelling of processed vegetable intake that takes into account individual characteristics (acceptability, intake level, age groups) as well as environmental cues (choice architecture and institutional setting).
