The HIPSTER project aims to advance high pressure and temperature processing in the food industry to enhance food safety and shelf life. It focuses on developing affordable industrial equipment and establishing guidelines for effective implementation of this technology.
High pressure and temperature (HPT) processing is a candidate technology for commercial food processing to obtain safer, high quality food products with extended shelf life, both chilled and shelf stable.
